Halkidiki is three peninsulas reaching south into the Aegean like the prongs of a trident, and that shape is the whole story for sunset. Each finger has a west coast and an east coast, and only the west facing shores see the sun drop into the sea. Get that straight before you pick your evening beach, because plenty of the most famous sand here looks the other way and hands you a glorious sunrise instead of the sundown you came for.
The clearest winner sits on Kassandra, the westernmost finger. Cape Possidi is a long, shifting sandbar that runs far out into the Thermaic Gulf with a small lighthouse at its point, so the water lies on both sides and the sun sets straight over open sea with almost nothing in the frame. Paradisos
A long, easygoing stretch on the gulf side of Sithonia near Neos Marmaras, with a wide western horizon that catches the sundown cleanly. Karydi

Come for the dazzling water by day, then cross to the gulf for the evening light.
Kavourotrypes
A string of small coves between smooth white rocks with clear emerald pools, beautiful and rightly loved, on the eastern side of Sithonia. Like its neighbour it faces toward Athos and the sunrise, so the evening sun drops behind the rocks rather than into the sea, and we list it last for sunset on purpose. Visit by day for the rocks and the water, and keep your sundown for a west facing beach.
