Where Perivolos runs into Agios Georgios, the sunbed rows suddenly acquire cushions, the umbrellas turn architectural, and a waiter appears with a wine list. That is Seaside by Notos, the club that treats Santorini’s black sand less as a party floor and more as the dining room of a very good restaurant that happens to reach the waterline. The house speciality is the whole arc of a day: a swim in the cobalt water, sushi under an umbrella, a Manhattan at the lounge while the sun drops, and dinner served while the same table picks up candlelight.

Sushi at noon, lanterns at midnight
The kitchen is the reason to choose this club over its neighbours. The menu calls itself cosmo Mediterranean, which translates on the plate to Aegean fish handled with restraint, a signature sushi list you would not expect twenty metres from a sunbed, and playful remixes of Greek standards backed by a cellar of Greek and European bottles. The World Luxury Restaurant Awards nomination is earned rather than ornamental. The party trick, and it is a good one, is the boat on the sand set as a dining table, so lunch arrives with the sea at your ankles.
The hours reward staying. At noon the beds fill with a crowd that reads more linen than logo, the soundtrack sitting at deep lounge volumes that let conversation survive. By late afternoon the lounge takes over, shaking the Martinis, Bellinis and Manhattans the bar names as its house calls, and the sunset crowd drifts in from the sand. After dark the candles and lanterns come out and the place runs until midnight, which no other club on this strip attempts with the same commitment. The same polish makes it a favourite stage for weddings and private events, worth checking against your date in peak season.
The honest deductions are two. First, the money is opaque: no bed rate, no cabana rate and no minimum spend appear anywhere in public, and a club this polished on Santorini will not be cheap, so get your number in writing before you commit a group to it. Second, it is genuinely the busy option, the strip’s biggest name drawing steady traffic from June through September, and anyone wanting an empty stretch of black sand should look further down the beach or at a quieter cove entirely.

The road south and the rate in writing
The club sits about 20 minutes by car from Fira on the southeast coast, with parking behind the beach strip. Without wheels, ride the bus to Perissa and walk south along the sand, a flat stroll with the sea for company. Taxis and arranged transfers do the run constantly in summer, and coming from Oia allow closer to 40 minutes.
