Nikki Beach more or less drew the blueprint for the modern luxury beach club in Miami in 1998, and in 2012 it planted its Mallorca flag on the Magaluf shoreline, a location that amounts to a small act of defiance. Outside the gate runs one of the busiest package resort strips in the Mediterranean. Inside, white daybeds ring an adults only pool, champagne arrives at the lounger, a saxophonist works the deck against the DJ, and a complimentary boat shuttles guests in from yachts anchored in the bay. The whole operation bets that you will pay a premium to have Magaluf kept at arm’s length while borrowing its sand.

Regional Executive Chef Alex Gullberg runs the menu off a Josper charcoal oven: whole Mediterranean sea bass, an Angus filet, a Caesar built on corn fed chicken straight from the coals, and a raw bar shucking Amelie oysters to order with caviar alongside. The showpiece is the Sushi Boat, a laden hull of nigiri and sashimi sized for six to eight that gets a small procession every time it crosses the deck, and it earns its theatre; sushi is the single dish guests mention most in reviews. Mallorcan touches surface quietly, Soller salt on the table rather than a folk costume, and the drinks list is champagne first, with the house champagne sangria the order that best fits a pool deck at three in the afternoon.

The scene runs on a weekly timetable worth planning around.
