Some buildings photograph well; this one composes itself. The beachfront home of Nobu in Malibu, opened in June 2013 at 22706 Pacific Coast Highway, is a single storey pavilion of roughly 6,300 square feet whose materials do most of the talking: board formed concrete, long runs of unvarnished teak, and glass that slides away until the dining room and the deck become one continuous plane ending at a rail, and then the ocean. Its architects kept every line horizontal so the eye travels straight out to the horizon, and the trade press has spent a decade agreeing, with one major travel magazine naming it among the world’s most spectacular waterfront restaurants and a 2023 city guide calling it the most beautiful waterfront restaurant anywhere.

Malibu never adopted the daybed club, so its shoreline luxury concentrates in a handful of decks over the sand, and this is the one where the architecture, the kitchen and the coastline reach the same standard at the same address.

Strip away the gossip column reputation and what remains is the best argument in America that a restaurant can be a piece of coastal architecture first. The pavilion sits low and dark against the highway, almost anonymous from a passing car, and saves everything for the seaward side: a full width deck on timber piles, a rail thin enough to disappear from a seated eyeline, and a palette of teak, concrete and raw steel that weathers rather than shines. At the golden hour the low sun runs the length of the deck and the whole structure performs the trick it was drawn for, dissolving into the light it frames.

Now for what the famous pictures crop out. The first is the highway: you arrive through a valet operation on the shoulder of the Pacific Coast Highway, not down some palm lined drive, and the transition from six lanes of traffic to that serene rail is abrupt. The second is the scene. This dining room is one of the most reliable celebrity sightings in Los Angeles, which means photographers loiter by the entrance, weekend evenings hum with performance, and a quiet dinner for two is easier to find at Tuesday lunch than Saturday sunset. The third is the sand itself: the tide regularly swallows most of Carbon Beach, so the postcard of a wide golden shore below the deck depends entirely on when the photographer stood there.

None of this dents the core verdict. The kitchen’s standards hold under the pressure of the room, lunch in full daylight is the underrated seating, and no other table in Malibu puts this much considered design between you and the Pacific. It earns the pilgrimage; it just earns it on a reservation made with military timing.

Carbon Beach earned the nickname Billionaires Beach for the real estate behind it rather than the sand in front, a narrow strand walkable at lower tides and largely underwater at the highest ones. The wet sand below the mean high tide line is public, reached through a small number of marked accessways off the highway, and strolling it past the decks and glass walls is one of Malibu’s stranger pleasures. The address sits on the ocean side of the Pacific Coast Highway just east of Malibu Pier, about forty five minutes from Santa Monica without traffic and well over an hour with it, so build the drive around your seating rather than the other way round. Valet parking at the door is the practical option on this stretch of highway. The booking mechanics reward discipline: the reservation window opens one month ahead on the restaurant’s own site, deck tables at sunset disappear first, and the noon opening gives the same architecture with softer demand. Weather rarely interferes, though the deck earns a jacket once the marine layer rolls in after dark.
