Navy Beach has held its 200 feet of private sand on Fort Pond Bay since 2010, at the end of Navy Road on the calm side of Montauk, named for the naval station that once worked this shore. It is a beachfront restaurant before it is anything else: coastal seafood, an enormous rosé list, tables that step almost onto the sand, and since a few seasons back a row of reservable daybeds and lounge corners for groups who want the day, not just the meal.

Among the venues on our Hamptons club directory it earns a rare compliment from us: the numbers are public. While its ocean side rivals quote by email, Navy Beach prints its daybed minimums, its deposit rule and even its card fee, which means you can do the arithmetic from your sofa and decide with no correspondence at all. The daybed minimum is not a rental fee, it is a spending floor, and that changes everything about who it suits. Fill all six places on a weekday and 250 dollars works out near 42 a head, which a Montauk lunch with drinks reaches without effort, so a full bed on a Tuesday is close to a free upgrade. The same logic runs for the lounge corner: fifteen friends on a weekday need only 50 dollars each of food and drink they were going to order anyway, and the private corner of sand comes with it.

The math turns hostile as the group shrinks and the calendar heats up. Two people against a 500 dollar weekend floor means 250 each before tax, service and the 4 percent card fee, roughly triple what dinner at a regular table would run, for the same kitchen and the same sunset. The champagne packages stacked on top, from a 140 dollar sparkling and juice set to a 625 dollar caviar and Dom Perignon spread, are cheerful upsells, not requirements. Our advice is blunt: under four people, book a table, over four, price the bed.

The fine print deserves its own respect. Half the money is due as a non refundable deposit, no shows lose it entirely, date changes close 48 hours out, and if weather forces the restaurant to cancel you get a transfer to another date rather than money back. None of this is unusual for the Hamptons, but all of it is real, and it makes the weekday block, cheaper and easier to rebook, the value play of the whole operation.

Fort Pond Bay is Montauk turned inside out: no surf, no rip, just a sheet of protected water that boats anchor on all summer, some of them ferrying their crews in for lunch. The restaurant’s stretch is private, which keeps the towel to towel crush away, and the west orientation hands it the best sunset angle in town. Navy Road branches off the western edge of Montauk village and dead ends almost at the restaurant door, a few minutes by car or taxi from the village and the LIRR station, which sits on this same side of town. Arriving by water is a house tradition, the bay in front serves as an anchorage and dinghies come ashore all summer. Tables open exactly 14 days out on Resy and by phone, and summer weekends go early inside that window, so set a reminder rather than a hope.
